Blueberry Cobbler

2 (12 ounce) packages frozen blueberries
1/3 cup granulated sugar
2 tablespoons all-purpose flour
1 1/2 cups all-purpose flour
3 tablespoons granulated sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup cold unsalted butter, cut into small pieces
2/3 cup whole milk
1/2 teaspoon pure vanilla extract
1 tablespoon granulated sugar


Preheat the oven to 375 degrees F. Butter an 8-by-8-by-2-inch baking dish.
Mix the blueberries with 1/3 cup of the sugar and 2 tablespoons of the flour. Spoon into the baking dish.
In a large bowl, whisk together the remaining 11/2 cups of flour and 3 tablespoons of sugar with the baking powder and salt. Cut the butter into the flour mixture with a pastry blender or 2 knives until it resembles coarse meal. Add the milk and vanilla and stir with a fork to form a wet, sticky dough. Drop rounded teaspoons of the dough over the top of the blueberries to cover them. Sprinkle the remaining 1 tablespoon of sugar on top of the cobbler and place the baking dish on the middle rack of the oven. (Place aluminum foil on the rack directly below the cobbler to catch any juices that might spill over.) Bake for 45 minutes, or until the top is golden-brown and the fruit filling is bubbling up through the crust.
Let the cobbler cool for at least 20 minutes. Serve warm or at room temperature.

It sounds excellent, and doesn't seem too difficult. I love blueberries and may have to try this one. Thanks for the recipe.

That does sound good. I have a son-in-law who loves blueberry pie and I'll bet he'd love this as well.

I love Blueberry cheesecake - looks so rich and yummy. I'd like to try this one as well.

Banana Pudding Cake

1 (18.25 ounce) package yellow cake mix
1 (3.5 ounce) package instant banana pudding mix
4 eggs
1 cup water
1/4 cup vegetable oil
3/4 cup mashed bananas
2 cups confectioners' sugar
2 tablespoons milk
1 dash vanilla extract
1/2 cup chopped walnuts (optional)

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan.
In a large bowl, stir together cake mix and pudding mix. Make a well in the center and pour in eggs, water, oil and mashed banana. Beat on low speed until blended. Scrape bowl, and beat 4 minutes on medium speed. Pour batter into prepared pan.
Bake in a preheated oven for 50 to 55 minutes, or until cake tests done. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
To make glaze: In a small bowl, combine confectioners' sugar, milk and vanilla. Whisk until smooth and of a drizzling consistency. When cake is cooled, drizzle icing over cake with a zigzag motion. Sprinkle chopped nuts over wet icing if desired.
Yield: 12 servings

Caramel Corn

Ingredients
2 cups brown sugar
1/2 cups corn syrup
2 sticks butter
1 teaspoon vanilla
1 teaspoon salt
1 teaspoon baking soda
2 poppers of pop corn
peanuts (optional)

Directions
Preheat oven to 250 degrees.

On stove top in a heavy saucepan, melt butter, corn syrup, and brown sugar. Allow mixture to boil for 5 minutes.

Put popcorn in a 5-6 quart greased roasting pan or two greased 13x9 baking pans. Add peanuts.

Pour sugar mixture over popcorn and mix well. Bake for 40 minutes, stirring occasionally.

Spread on waxed paper to cool.

I can cook almost anything I want to eat.
Being I am lazy I usually do not cook.
