How Many Eat Cabbage on New Year's Day?

Post by ballparent »

We always do this. The recipe for how I serve it changes once in a while. But usually it's cooked cabbage with cheese, or vegetable soup (that has cabbage in it, my favorite way), smoked sausage and cabbage, or ribs and cabbage. Haven't decided how I'll fix it for the crew this New Year's Day. Any good recipes to try? Oh, and I always put a silver dollar in the dish and whoever gets it is supposed to have money all year.....I think, at least that's what we say.

That's my choice, too - but I generally have to fix it only for myself.
If, by chance, I happen to be eating with any other members of my extended family, they would all unanimously veto any inclusion of "cabbage", cooked or raw, on the menu. They would also forbid use of "onions" and "sausage" in any dish - it's tough to cook for this group.
Fortunately, we rarely get together on New Year's. So I get to cook just for myself on that day without regard for other people's preferences and restrictions. Cabbage and pork it is for ME.

I usually make cabbage rolls if the kids are coming over. If it's just us, I have boiled cabbage with ham or hot dogs and sauerkraut.

Here's a couple of good recipes:

Sausage and Cabbage Recipe
Ingredients
16 ounce package Bob Evans Italian Dinner Link Sausage (8 links to 1 pound)
3-1/2 cups course cut green cabbage, stems removed
2 cups peeled, sliced carrots, 1/4 inch width
2/3 cup scallions, sliced - green part only
1 medium onion, diced
1 tsp sugar
1/2 to 2/3 tsp. garlic powder
1/4 to 2/3 cup water
Salt and pepper to taste

Instructions
Cut each dinner size sausage link into 3 equal pieces. In medium-large size soup pot over medium-high heat, brown sausage. As sausage is cooking and halfway done, add carrots and onions. Continue to cook for 5 to 7 more minutes over medium heat setting. Add cabbage. Continue to cook until vegetables become tender and sausage is no longer pink. Add water if needed. Cover and simmer. Add seasoning and adjust flavor. Add scallions. Serve in large bowl. Refrigerate leftovers.
Yield: 4 to 6 servings

Sauerkraut Spareribs Recipe
This hearty meal pairs sauerkraut with country-style pork spareribs enriched with beer, onions, and spices. If you do not wish to use the beer, simply substitute additional beef broth. The dish is quite easy to make but will take some time to simmer, so plan ahead.
INGREDIENTS:
6 slices of bacon
3 pounds country-style spareribs
1/2 cup (about) all-purpose flour
1 medium sweet onion, sliced very thin and separated into rings
6 cups beef broth
12 ounces beer (may substitute additional broth)
1 bag (16 ounces) fresh sauerkraut (or 3 cups homemade), rinsed and drained
1 Tablespoons sweet Hungarian paprika
1/2 teaspoon caraway seeds
1/2 teaspoon coarsely-ground black pepper
PREPARATION:
Place bacon in a large Dutch oven and cook until crisp. Remove, drain, crumble into large chunks, and set aside.

Dust spareribs with flour.

Brown in the bacon drippings. Set aside.

Saute onions in the drippings (add a little butter, if necessary) until translucent. Stir in beer, scraping up any browned bits from the bottom. Cook for 3 minutes, then add beef broth.

Return spareribs to the pot, along with any accumulated juices. Add sauerkraut, paprika, caraway seeds, and pepper. Stir.

Cover and simmer over low heat until ribs are tender and falling off the bone, 3 to 4 hours. Remove bones and stir in bacon pieces before serving.

Yield: 4 to 6 servings

I don't like cabbage but love sauerkraut.

Does it count or does it have to be raw cabbage?

Yep. it counts. :) In fact that's what we're having.....ribs and sauerkraut. I'm using the recipe posted above but I'll move everything into my slow-cooker for the last 3-4 hours and as usual, double the recipe. :)

I don't brave any more than a couple times a year with all the protestors here  I found though if you rinse your kraut its not as strong..
