nope I splurged a little tonight had fried bacon on homemade bread (actually frozen bread dough) with mustard and a cup of chilli with wide noodles cooked in with some texas pete um um.

Do you like cranberries? This previously posted chicken recipe would work wonderfully with HAM pieces instead - just alter spice/thickening choices!

CRANBERRY BAKED CHICKEN - SERVES 4 -6 - based on multiple sources

4 - 6 lg chicken pieces - I usually use bone-in but skinned breast halves
2 - 3 Tbsp oil
S & P to taste on both chicken pieces and sweet potato slices
2-3 lg sweet potatoes - scrubbed [peeled or NOT] and thinly sliced across
1 Tbsp butter/margarine - thinly sliced/chunked into 3-4 pcs
1 med sz onion} - finely diced along with the seeded/cored green pepper
1 green pepper} - OR use 1 [16-oz] pkg frozen pepper stir-fry mix chopped
2-3 stalks celery finely sliced
1 [16-oz] can jellied cranberry sauce, whole-berry or plain
1 Cup EITHER chili sauce OR ketchup OR chunky salsa/picante sauce
2 -3 Tbsp orange marmalade
1 -2 Tbsp Worchestershire sauce
1 -2 tsp poultry seasoning
1 pkg dry chicken gravy mix - can be omitted - juice will just be less "thickened"

In a large, deep skillet, brown seasoned chicken pieces in 2 Tbsp oil til golden on all sides
Place sweet potato slices in a 3-qt casserole dish; season with S & P and dot with butter/marg
Remove browned chicken pieces from skillet and place on top of sweet potatoes in casserole.
Add all the chopped veg to the hot skillet along with additional Tbsp oil if needed
Cook/stir til softened, lightly browned
Add the cranberry sauce, salsa, seasonings, marmalade, and gravy mix
Cook/stir til all are well combined, slightly thickened and bubbling
Pour over/around the chicken pieces and potato slices in the casserole dish
Shuffle around a little to coat all; cover casserole dish with lid or foil.
Bake for 60-75 minutes in a 350 degree oven - remove lid/foil for final minutes.

This has all the Holiday flavors, but fixes much more quickly and needs few sides.
I always use skinless chicken pieces that are on sale or pull off the skin myself.
So this dish has mostly protein, low-fat, good-carb ingredients. It's really good.

I can't afford either the expense or the calories of eating out - never could!!
I REALLY COOK - many "tried-and-true" recipes, but I also enjoy trying new - although limited to the "low-carb" variety now, and NO pastry/baked goods.

Are you very active 'Cag"? I definitely watch the carbs but every now and again I need to feed my monster sweet tooth. Doing a little exercise will help burn the few extra wasted calories. I can afford to eat out but it's an unnecessary expense. Heck, some folks spend a car payments worth eating out monthly. That's just insane in my opinion.

I like to keep my dressing simple,just dry out some bread break into pieces mix with celery,onion,sage then add a little water make a ball and stuff it up in there,Delicious :122249

On no notice with no prior planning or coordination my granddaughter and I put a home-cooked delicious meal on the table in under 2 hours. COOK IT YOURSELF - eating OUT is expensive and fattening - and quit calling "good nutrition" a ridiculous "Democrat" idea. Obesity is the principle cause of health care problems and expense. We are ALL responsible for feeding ourselves and our families and maintaining a healthy weight, nutrition, exercise lifestyle! I like/enjoy cooking.

Eating out in waitress tip style restraunts does get expensive but grocery store food is not cheap anymore especially meat,a good steak will cost 8 or 9 dollars now maybe more,by the time you get all the ingredients to make a meal, use energy to cook it,it adds up, then you got all them dishes to do afterward,you can go to burger king or mcdonalds and get a good meal for 4 or 5 dollars,I like to use coupons and specials to make it even cheaper,but I do agree it probably not the most healthy food, but I love the taste of some of that stuff.I still like a good home cooked meal to balance it out, but will never give up my tacos bells and burger joints and pizza places of the world.For big families it probably is cheaper to cook at home, but individually I don't think you save any.

I'm with ya all the way on all of that C-Bolt. Expensive either way and ya just cant get that taste at home, specially Taco Bell.

I got a weakness for them mcdonalds double cheesburgers,something about them little chopped onions I crave,them restraunt onions are almost always better for some reason that what you can buy in a store.Seems like I've seen them little chopped onions in jars though in the produce,maybe those would be good, have to try them sometime
