since its a preview, are people are allowed to wrestle multiple weight classes below their hydration?

From OHSAA web Site
A. A wrestler can participate in a scrimmage or preview before an alpha assessment. However, he or she cannot compete in a regular season match until an assessment is conducted.

We did not have weigh ins so no way of knowing. All coaches were told it is scratch +5 and that we was having weigh ins. When the teams arrived I informed them they all good no weigh ins. I would hope they didn't cheat the system. At any rate it was a preview so doesn't matter. It went great was a good time. Your answer they don't even half to Alpha to wrestle in a preview. So your answer Yes. And Multiple below ???? by me looking I didn't see any wrestler who looked way over any weight classes seems to me all coaches were honest.
