Now that the deer is cut up....
how do you like yours cooked?
Myself I love the Jerky.
I also cut steaks into 2x2 pieces,marrinate them ina bag with Italian dressing over night.Next day,take pieces and put 1 Jalapeno pepper in the middle.roll up then wrap bacon around it,secure it with a toothpick(soak them in water so they dont burn)
Cook ON THE GRILL! till done.
Cooking these in the oven just wasn't the same.
Its awesome,people have no clue their eating deermeat till you tell them.

two pounds of deer burger
three eggs
three/four tbsp of worcestershire sauce
1/2 jar of beef bouillon pellets (the small pieces not cubes)
1/2 small onion chopped finely
One packet dry onion soup mix
Oats
Family sized can Cream of Mushroom Soup
Large Jar Brown Gravy
Pour gravy and cream of mushroom soup into a mixing bowl and stir until well mixed. Take about 1/2 cup and cover the bottom of a large baking dish and then sit the rest to the side. In another mixing bowl, take eggs, worcestershire sauce, bouillon, dry soup mix and onion and mix together. Be sure to dissolve the bouillon in the liquid of this mixture. Stir oats into mixture. Add enough oats that the mixture coats the oats. Add only enough oats so the mixture is soggy, not too dry. Probably close to two cups of dry oats will do. Add in the ground deer to the oat mixture and mash together with hands like making a meat loaf. Make the final mixture into patties about the size of big hamburgers. Arrange them in a baking dish. (It is ok to stack them if needed) . Pour the gravy mixture over the patties in the baking dish to cover like making baked steak and gravy. Bake at 375 for one hour.
Serve with mashed potatoes and all the fixins.

Yes! And loves it.The jalapeno gives it a flavor with out the heat.Its very tasty.It actually tastes like beef.

I was at Cabela's last week and they have some really nice meat processing equipment.

When you do the ground Jerky you need to mix the flavoring in with the meat not just put it on the outside of it. Kind of mix it up like you would a meatloaf.

Heres one recipe we use
1lb ground steak or ground deer
2 tsp salt or tenderizer if available
2 tsp wild game seasoning
2 tsp of liquid smoke
1 tsp black peppercorn (we put it in a cloth and smash it with a hammer
so there are still some small chunks and some powder)
1/2 tsp garlic powder
This is hard to type out cause I am on who likes to just pour in the ingredients and hope for the best. but it always works out
this is one of Grandmas old recipies, Good news is hers always worked out great.
We also have some for BBG flavored, terriaki (sp) and some others to, just let me know the flavor you are looking for. I might have it.
