There are two names that come to mind. Jay Wackler, who played for Jackson from 1992-1994, and Chris Daniels, who played in 1996 and 1997.
Wackler had great size (I'm guessing 6'3" 250lbs.), strength, speed, and a mean streak like you wouldn't believe. I was young when he played, but I remember him being dominant. Seemed like he was in the backfield every single time the ball was snapped.
Daniels was a smallish DT at about 6'2" 210lbs. but he was deceptively strong and had a motor that never stopped. Like Wackler, he was out there to destroy whatever was in front of him. Chris was one of the best kick coverage players ever at Jackson as well. I can't even begin to count how many tackles he made on kickoffs and how many kick returners he literally knocked out with some of the most vicious hits you'll ever see in high school football.
As Locos said, John Leonard was another great one at Jackson. Physically imposing with good speed and an aggressive attitude. Leonard was a three year starter at DE and improved each season. He was named the SEOAL South MVP in 2006, which is a very rare honor for a lineman.
The last two years, Ryan Hughes has been dominant at DE for Jackson. I didn't get to watch him as much as I have watched many of the others, but from what I saw, Ryan was much like John Leonard.

Gallia's Ike Simmons was a pretty good DE, too. Two-way guy, also played RB for the Blue Devils.
